The theme for this year’s International Earth Day was “Our Power, Our Planet” — a call for communities everywhere to take real steps for the environment, not just make promises . At Kaachi Grand, the only 4-star premium hotel in the heart of Paro town, we did not just mark the day. We lived it with our guests.

Bhutan is already a global leader in environmental care. It is the world’s first carbon-negative country, with forests absorbing more CO2 than the entire nation produces . From 6:00 PM onward, Kaachi Grand dimmed its lights. Not completely — safety always comes first — but enough to make a point. We used minimal electricity across all public spaces. The lobby glowed softly. The corridors whispered with shadow. The rooftop, usually bright with valley views, became a quiet space under the stars.
This was not about inconvenience. It was about awareness. Every guest who walked through our doors that evening felt the difference. They understood, without a long speech, why we were doing this.

Where Bhutan Met the Earth Plant-Based Plates, Zero Meat

The highlight of the evening was dinner at Lomba Restaurant. Every table was set with candles — real wax, real flame, no electric substitutes. The warm light danced on traditional Bhutanese woodwork. The Paro valley breeze drifted through open windows. For a few hours, our guests dined the way people did before neon and noise took over the night.

The menu was entirely plant-based. No meat. No fish. Just fresh vegetables, Bhutanese red rice, organic buckwheat, local herbs, and mountain-grown greens. Our Culinary team led by Chef Ugyen worked with Paro valley farmers to source every ingredient within a 5-kilometer radius.

The Menu Included:

•  Ema Datshi (Bhutan’s national dish) — made with farm-fresh chilies and organic cheese

•  Buckwheat Pancakes with wild honey from local apiaries

•  Seasonal Greens harvested that very morning.

•  Red Rice grown in our own local place.

•  Traditional Herbal Tea( Cordyceps) from our high land.
